Sonoran Chicken Skewers

with Chipotle-Lime Aioli

Yield: 4 servings
8 Chicken Skewers (3oz./90gm. ea.)
2Tbs W&L Sonoran Seasoning Blend
½C / 125mL Mayonnaise
1 Lime, zest and juice
1tsp. / 5mL Chipotle in Adobo, chopped
1 Garlic Clove, chopped finely

If using wooden skewers, soak them in water for at least one hour.

Place a dish underneath and then, holding a chicken skewer, sprinkle the chicken with W&L Sonoran seasoning blend until covered. Let the skewers sit for one to two hours before cooking for better flavor.

To cook, brush the grill or heat a bit of oil in a skillet large enough to fit the skewers. Cook until chicken is done.

For aioli; place mayonnaise in a bowl add the lime zest and juice, and finely chopped garlic. Remove one chipotle from the adobo sauce, chop finely and add to the mayo. Add a spoonful of the adobo sauce and stir to combine the aioli. Serve cold.
