| 8 | Chicken Skewers (3oz./90gm. ea.) |
| 2 Tbs | WL Sonoran Seasoning Blend |
| 1/2 Cup / 125mL | Mayonnaise |
| 1 | Lime, zest and juice |
| 1 tsp./5mL | Chipotle in Adobo, chopped |
| 1 | Garlic Clove, chopped finely |
If using wooden skewers, soak them in water for at least one hour.
Place a dish underneath and then, holding a chicken skewer, sprinkle the chicken with WL Sonoran seasoning blend until covered. Let the skewers sit for one to two hours before cooking for better flavor.
To cook, brush the grill or heat a bit of oil in a skillet large enough to fit the skewers. Cook until chicken is done.
For aioli; place mayonnaise in a bowl add the lime zest and juice, and finely chopped garlic. Remove one chipotle from the adobo sauce, chop finely and add to the mayo. Add a spoonful of the adobo sauce and stir to combine the aioli. Serve cold.
